TRACEABILITY MODEL FOR FOOD SAFETY AND QUALITY

As a result of bio-terrorism concerns along with the recent mad cow disease scare, food safety and traceability is presently the biggest concern in the international food industry. AISAqua, therefore, has explored and developed whole chain traceability models that address food safety and quality (including HACCP and other international standards and certifications), while incorporating environmental standards, thus relating safety and quality to sustainability.

In the shrimp industry, AISD designed a pond coding system in China, by which the product from each pond can be traced all the way from the final consumer back to its original source, as well as each step in the supply chain. Instead of certifying each individual product, our approach focuses on certifying producer and processor facilities and practices and then placing a label on the packaging. Testing and quality control procedures are put in place to identify problems with individual products. AISAqua’s coding, testing and labeling system ensures accountability for compliance with food safety (e.g., controlling use of banned antibiotics), quality (e.g., handling), and clean production standards (e.g., waste water processing), and allows problems to be immediately identified and addressed. AIS Aqua uses barcodes to record identity information for individual products. The system has been recognized by major US buyers through dramatically increased sales in addition to innovation awards.
